Blueberry Lemon Pie
This blueberry lemon pie is a delicious and refreshing dessert that combines the sweet-tart flavor of blueberries with the bright citrusy zest of lemons. - ¾ cup granulated sugar
- 5 tbsp cornstarch
- ¼ tsp salt
- 4 cups fresh blueberries
- zest of one lemon
- juice of half a lemon
- 1 tbsp butter
- 2 prepared pie crusts
Instructions
- Preheat oven to 375 degrees F.
- Mix sugar, cornstarch, lemon juice and zest, and salt in a medium bowl.
- Pour mixture on blueberries and gently stir just to combine.
- Line a 9 inch pie plate with one crust. Pour berry mixture into crust and dot with butter.
- Top with remaining crust however you would like – full cover with a slit cut for vent, lattice top, or something new like hearts!
- Bake until filling is bubbly and crust is golden, approximately 50 minutes.
