Blueberry Lemon Pie

This blueberry lemon pie is a delicious and refreshing dessert that combines the sweet-tart flavor of blueberries with the bright citrusy zest of lemons. Blueberry Lemon pie

Ingredients

  • ¾ cup granulated sugar
  • 5 tbsp cornstarch
  • ¼ tsp salt
  • 4 cups fresh blueberries
  • zest of one lemon
  • juice of half a lemon
  • 1 tbsp butter
  • 2 prepared pie crusts

Instructions

  • Preheat oven to 375 degrees F.
  • Mix sugar, cornstarch, lemon juice and zest, and salt in a medium bowl.
  • Pour mixture on blueberries and gently stir just to combine.
  • Line a 9 inch pie plate with one crust. Pour berry mixture into crust and dot with butter.
  • Top with remaining crust however you would like – full cover with a slit cut for vent, lattice top, or something new like hearts!
  • Bake until filling is bubbly and crust is golden, approximately 50 minutes.
