Curd
- 3 eggs large
- 3 egg yolks reserve whites for meringue
- ⅓ cup granulated sugar
- ½ cup orange juice fresh squeezed
- zest of two oranges
- 1 stick of unsalted butter softened, cut into bits
Prepared Pie Crust
Your favorite meringue topping
Instructions
- In a pot, add all the ingredients. Let it cook on medium-low, whisking frequently. Once it coats the back of a spoon, it is done. Be careful not to let it overheat and boil.
- Pour curd into hot crust and bake for an 10 minutes to set the curd. Once baked, allow the tart to cool. Place it in fridge with a wax paper topping over curd to fully set and chill.
- Prepare meringue from your favorite recipe and spread over tart once cool.
- Serve cold.
