Dark Chocolate Pistachio Cookies

Dark Chocolate Pistachio Cookies

Ingredients

  • 1/2 cup butter unsalted
  • 2 tbsp butter unsalted
  • 2/3 cup light brown sugar packed
  • 1 large egg
  • 1 cup all purpose flour
  • 2 tbsp all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt kosher works best
  • 3.5 oz dark chocolate chopped
  • 1/2 cup roasted pistachios chopped finely
  • sea salt for topping

Instructions

  • Put 1/2 cup of the butter in a saucepan over medium heat. Melt and stir. It will get bubbly and then frothy. Once it becomes frothy, remove the pan from the heat once the butter turns amber color and has a nutty aroma.
  • Pour the browned butter into a glass measuring cup and add 1-2 tbsp of remaining butter in to make it a level 1/2 cup. Place in the refrigerator to cool.
  • In a small bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, whisk together the cooled butter, brown sugar, and sugar. Butter can still be a little warm.
  • Add in the egg and vanilla and whisk vigorously for about 2 minutes. The mixture should be smooth in consistency.
  • Pour in the dry ingredients. Gently stir and fold the dough together with a rubber spatula. Toss in the chopped dark chocolate and pistachios. Continue to fold until the dough is completely combined.
  • Cover the bowl and chill the dough in the refrigerator for 30 minutes.
  • Preheat the oven to 350F and line a large baking sheet with parchment paper.
  • Scoop 4-5 cookie dough balls onto the baking sheet, well spaced.
  • Bake for 12-14 minutes, or until the edges are golden brown and the center looks pale, puffed. May appear very slightly underdone.
  • Sprinkle each cookie with more chopped pistachios and a pinch of flaky sea salt.
  • Allow to cool.
